چکیده

There have been few quantitative cross-cultural studies of taste and smell perception in humans, despite the obvious relevance of such research to scientific and commercial enterprises, and the fact that many cultures differ in their food preparation, dietary, and personal hygienic practices. The important role of the chemical senses to the species as a whole in such diverse matters as the detection of dangerous fumes and the selection of appropriate foodstuffs suggests that the basic chemosensory mechanisms responsible for the detection and evaluation of chemical signals are essentially the same among cultures. However, genetically related sensitivities to specific odorants and tastants (e.g., androstenone and phenylthiocarbamide) vary in frequency from group to group, and likely account for at least some cross-cultural differences in taste and odor preferences and aversions. These genetically determined factors interact with the well-known influences of experience on taste and smell perception to produce a variety of chemosensoryexperiences.

Chemosensory cross-modal stroop effects: congruent odors facilitate taste identification.

In order to explore the cross-modal cognitive associations between smell and taste, a chemosensory analogue of the Stroop task (Stroop 1935) was developed. Fourteen participants were presented with an odorant and a tastant and asked to identify the tastant as "sweet" or "sour" by pressing 1 of 2 buttons as quickly as possible. Participants were faster to name the taste when it was presented wit...

The Physics and Biology of Olfaction and Taste

Traditionally, the chemical senses include olfaction and gustation: olfaction (smell) reports on gaseous substances carried by air over long distances, and gustation (taste) provides information about food material already in the mouth. However, in recent times behavioral, physiological, histological, and molecular studies have increased our understanding of vertebrate chemoreception, and four ...

A longitudinal descriptive study of self-reported abnormal smell and taste perception in pregnant women.

Self-reported abnormal sensitivity, qualitative distortions and phantom sensations with respect to smell and taste was assessed with a longitudinal design, based on questions referring to gestational weeks 13-16 and 31-34 of pregnancy in comparison with 9-12 weeks post partum and with non-pregnant women with corresponding time durations and intervals. The results show that abnormal smell and/or...

Temporal synchrony and integration of sub-threshold taste and smell signals.

The importance of stimulus timing and location on the perceptual integration of taste and odour was studied based on a sub-threshold methodology. From a panel of 16 people, 12 showed the integration effect previously reported while 4 showed no effect. The experiment was repeated using retronasal and orthonasal delivery of the odour and with tastant present or absent in the mouth. Integration of...
